Slow cooker Sundays

Well, with the return of the cooler weather here, I am starting our PJ day, slow cooker Sundays again. I thought I would share which recipe we are doing each week. I have been wanting to try some new ones lately. So, I started today. Today in the slow cooker we have Tortilla soup.

I had read many different recipes all over the internet, but had to go with what we have. This is what I did.

1) Place 3 FROZEN chicken breasts in the bottom of the slow cooker
2) Added the following to the slow cooker- on top of the FROZEN chicken
      ~ A can (a larger can) of diced tomatoes- for chili (so all the spices are already in there)
      ~ Chicken broth- I was adding just under 2 cups, but only had about 1.5 cups, so I also added some                      beef broth with it
      ~ Chopped onion, frozen corn, pureed garlic- the kind with jalapeƱos, and a package of taco seasoning
3) Turned the slow cooker on low for 7.5 hours

(I don't really do measurements, so use your best judgement and what your family likes for the amounts of chicken, corn, onions and garlic.)

Once it has been in there for about 7 hours, I will make the tortilla strips. I like to use the "flavoured" tortilla shells- add some colour. I will coat both sides of the tortilla's with olive oil, and then cut them with the pizza cutter into small strips. Then bake them, you can broil, or turn the oven to about 350 and then just watch them.

Once the soup is done, we are going to top ours with the tortilla strips. You can also put sour cream, salsa what ever you like on the top. We are also going to have ours with garlic toast- why- well because most things we have like this, the kids want garlic toast, so it has just become a staple in our house!
