And what is better, is these ones aren't even that bad for you! They are even easier to make! We had these last night (and have had them many times before- we probably have them 2-3 times a month!). I found the recipe on Spark Recipes about a year ago, I have made some changes to the recipe- I think the original included rice and some other things in it. But, it just seemed like too much- and my kids won't eat rice (unless we are really tricky!). So, this is how I do it. Of course, it is a burrito- so add what you like in them!
ground beef
onion- chopped
taco seasoning (low sodium)
frozen corn
salsa
1 can of refried beans
6 tortilla shells (I use the ones with either sun dried tomato, or spinach for a bit more flavour!)
grated cheese
I add the corn and salsa by looking. Depending on how much you like corn or salsa- add what you like.
Preheat the oven to 350.
First I brown the ground beef, then add the onions, corn, salsa, and taco seasoning. I let that cook while I grate the cheese (I probably grate about 1 and a half cups or so).
With the meat mix still cooking, I spread a thin layer of the refried beans all over the shells- I do one at a time, because of space!
Then I put a row of cheese in the middle of the tortilla, and then add some of the meat mixture onto that. Then roll!
Place them in a 9x13 pan (or what you have that they will fit snuggly into!)- Remember to spray your pan first! Continue getting the tortillas ready and into the pan. My mix usually makes 6 burritos.
Once they are all in, I put some cheese on the top (to use up the 1 and a half cups -ish). Then into the oven for about 15 minutes!
They are so good! We try to limit ourselves to one each (be careful they are filling), have them with a side salad. Then you will have leftovers for another night, or for lunch! (the kids share one!)
In other news... Yesterday I was on Facebook, and there on my news feed was a status from the light the night walk- prairie edition. It said that the flames office had dropped off some hockey tickets for the Abbotsford Heat game tonight. They were going to do a draw for them, and to write down what your favourite part of the light the night walk is. I wrote that I love being there with my supporters! And, guess what- I WON! So, tonight, we are going to see the Abbotsford Heat (they are the flames farm team, so we do know some of the players). The best thing, I won 4 tickets, so we can take the kids. They have never been to a hockey game, so I am excited. It starts at 7, so I am not sure if we will be able to stay for the whole thing, since Danika has school and dance tomorrow, but it will be good! We are curious to see how they would do at a game! When we told the kids, Danika was really excited that she gets to see Giordano- so I had to explain that it isn't his team. And then Bryce was upset that he can't go on the ice to shot the puck in the net. Trying to explain to him that we are WATCHING was pretty hard! Oh well, we will see when we get there!
Oh, and we got the forms for Danika's dance recital dress. I think it is so cute, and can't wait to see her in it! This is what she will be wearing- and in the blue!
