Here is another of our make once and use twice type recipes!
Last night we had Mexican chicken tacos. I found this recipe for the slow cooker, and just had to try it. It was so easy, and so good! And I can't wait to make it into something else tonight!
I used 3 frozen chicken breasts- placed them in the slow cooker, and put 1 package of taco seasoning on them. The recipe called for salsa, but I know my kids think our salsa is too spicy, so I used canned tomatoes that have the spices in them. And then just for a bit more liquid I added some chicken broth. I turned the slow cooker on low from about 9am until 3pm. Then, I shredded the chicken and let it sit.
When it was time for dinner, I grabbed some tortilla's, and grated some cheese. We put some of the shredded chicken on the tortilla, and some cheese. Rolled them up and YUM! We had this with Salad!
Tonight, I am using the chicken again. Since it has taco seasoning on it, it is going to be a mexican type thing again- good thing we all like that kind of stuff. I am going to make it into a casserole type thing. Take the chicken, add some corn, and other veggies, along with some cooked brown rice. I will add that to a casserole dish, and top with some crunched up nacho chips and grated cheese and then bake in the oven for about 15-20 minutes! And, by adding this stuff, I am sure we will have lunch for tomorrow too!
There we go- 3 frozen chicken breasts, a few other ingredients- and 4 meals- 2 dinners and hopefully 2 lunches (we are eating some today for lunch too!)
