Another recipe!

Yesterday I had planned to make a chicken/spinach recipe. But, the night before I had taken out some chicken and spinach sausage so we had to use that. I figured it would work in the recipe. Then realized that I was missing a couple things in the recipe, so I changed it a bit. Turns out, this was a GREAT recipe. The kids even liked it. I went out to the gym and ate something lighter when I got home. But, the reports were good, and we had some to freeze, so we get two meals out of it!

- Pasta- which ever type you like, we used penne
- chicken sausage- ours had spinach and feta, and was already cooked so we just had to heat it.
- onion- diced
- tomato paste
- chive and onion cream cheese (the whole container)
- spices- I used italian seasoning and garlic
- grated cheese (I used marble)

Start cooking the Pasta, and while that is doing, get everything else ready!

Cut the sausage into bite sized pieces and put them in the frying pan with the diced onion. I let that cook for a bit.

In a bowl, mix the spices, tomato paste, and the cream cheese. Then add the sausage and onion when it is cooked. Mix that so everything is coated, and then when the pasta is ready, add that and mix. Then put in an oven safe dish and cover with grated cheese.

This is where things get tricky- I put mine in a 9x13 dish, because that is what the original recipe said. It also said to cover it and cook it on 375 for 30 minutes (I only did 25), then to uncover and cook for another 15.

**After making the recipe, the pasta was a bit hard in places (over cooked)- so, next time, since everything is pretty much cooked, I will put it in a oven safe bowl, so it is deeper, and bake it uncovered for 20-25 minutes!

But, either way, everyone enjoyed it!
